Our roots

Chevron Villette, a family history

The Chevron Villette Winemakers are anchored in their land by the history of two families. The vineyard is today managed by Guillaume de Chevron Villette, expert winemaker, whose success and development is thanks to a passionate knowledge of his land, vines and wine.

The story starts with the union of two families from the Savoy nobility : the Chevron and the Villette. 

1919

The Chevron Villettes arrived in the Var after the marriage of Pierre Joseph de Chevron Villette and Marie de Colbert-Cannet, Guillaume’s grandparents. The Colbert family were the last representatives of the lordship of the Cannet, and had been producing wine in the area for centuries. Guillaume’s grandfather was the first to plant vines on the Domaine de Reillanne.

1956

Guillaume’s father, Bernard de Chevron Villette, settled at Château Reillanne. At the time, the land it cultivated in mixed farming, with just 8 hectares of vines. 

1975

After a first phase of expansion, the property grew to include over 60 hectares of vines. During this time, Bernard de Chevron Villette greatly contributed to the creation and development of the appellation Cotes de Provence.

1983

After the premature death of his father (1980) and mother (1981) Guillaume took over the Domaine. Having inherited the family passion, he undertook technical and oenological studies to become a winemaker. While still a student he gathered his first grape harvest and marked the start of a new era thanks to an innovative idea: pooling the commercialisation of his wines with those of other producers. 

1987

Guillaume established the marketing company Vins Chevron Villette and built a new 900 m2 cellar for the production of 2000 hectolitres of wine. This cellar, equipped with innovative material for the time (stainless steel vats, refrigeration unit, pneumatic press), provided all the necessary infrastructure to produce quality wines.

Passionate about ecology, he reorganised the vineyard with trellises and sustainable farming methods by eliminating chemical fertilizers, and reducing herbicides, insecticides and pesticides. He adopted a simple philosophy : ‘nature must be left to express itself as the best wines are made from the best grapes’. In 2011 this adage enabled him to apply the signature Terra Vitis to all his vines…. without forgetting the 100 hectares cultivated organically. 

1993

The expansion of the operation required the construction of a building to house the bottling plant, the stocks and logistics’.

1995

The first two commercial partnerships were established with Château Colbert Cannet and Château Castellamare. His position was further strengthened with the acquisition of Château Camparnaud. The SCEA Château Reillanne was founded in 2005, with over 200 hectares of vines.

2000-2010

The production cellar was extended and modernised (growing from 900m2 to 3600m2) enabling the production of 30000 to 40000 hectolitres, and between 5 and 6 million bottles. In keeping with the ecological ideals a waste water treatment plant was added. These recent improvements enhance an ultra modern production unit, combining respect for the grapes and their vines with oxidation and temperature controlling techniques; the fruit of hard work and bold investing. During this time, the operation grew from 200 hectares to 500 hectares with the addition of the management of Château Chevron Villette, Château Thouar, Château du Haut Rayol, Château de la Sauveuse and Château Marouine.

Today

Surrounded by a dynamic team, always ready to meet new challenges, Guillaume de Chevron Villette continues to write history with new innovative projects.  Whilst serving the cause of a reference signature for Provençal wines produced in individual cellars, Guillaume is passionate about his work built on true family, environmental, cultural, social and entrepreneurial values.  He is proud to continue the marvellous history of the Chevron Villette family, history built with audacity and determination. 

The art of a winemaker

Modernity & Ecology,
a successful bet !

Our challenge is to put into place a maximum of means and technology aimed at environmental protection all along the production chain, from planting the vines right up to the consumer. As a result, each stage – planting, picking, producing, bottling, transporting and logistics – has been carefully thought out and optimised to protect that which houses and employs us: the environment. Today, the Chevron Villette vineyards cover 500 hectares and make up one of the largest wine making properties in Provence. Thanks to a clear choice of investment in new technologies, the exploitation has also become one of the most modern and well-equipped in France.

« Since taking over in 1983 I have been aware of the environmental questions and decided to take a stand as a forerunner in tackling these issues, particularly as 110 hectares of our vines are in the heart of the national natural reserve of the Plaine des Maures. With hindsight, I am sure that this environmental work ethic has improved the quality of my wines in addition to boosting the image of my produce and my company. »

Nature at heart

img-terra-vitis-ab-bio-vigneron-Chevron-Villette-vin-vigneron-var-provence-cote-azurBecause we were conscious right from the beginning of the benefits of protecting our surroundings in order to anticipate long term development, we chose to think through and optimise each stage of our production along these lines. From planting the vine through to the consumer, via picking, producing, bottling, transport and logistics, the maximum of means and technology have been put in place to protect the environment, our primary work tool and home.

In the vines

Organic agricultural techniques have been used on 100% of our vines for over 30 years. The Terra Vitis certificate which we obtained in 2011 means that today we can certify that our vines are cultivated respecting the principles of sustainable farming. On top of that, we have 180 hectares of certified organic agriculture.

We have eliminated herbicides and chemical fertilizers and 30 years ago we installed recuperation panels to lower the doses of pest control products.

Organic fertilizers or compost, suitable for organic farming are used on 100% of our vines.

At least, 20 hectares are cultivated in biodynamie since a few months and next vintage will be certified by Demeter (in 2016).

In the wine cellar

Cross flow filtration means that there have been no additives in our wines since 1994 nor in the lees since 2010.

Cascading water stations, which are used in treating viticultural waste, avoid polluting the water tables and waterways.

For transport

Sustainable logistical choices such as grouped dispatching reduce carbon dioxide production. In the offices : Photovoltaic panels have been installed on the roof of some of the buildings (about 6000m2), thus generating more than the total electricity consumption of the company.

Work in the vines

art-vigneron2Good wine is made from good grapes, produced from well maintained vines. Guillaume de Chevron Villette organises his work programme based on this important fact.

  • A weekly visit to each plot of vines.
  • Total traceability of all the methods and actions taken on each plot, allowing nature to express itself, with minimum intervention, to produce a natural, optimal quality grape.
  • To avoid treating against grey mould, and to streamline the yield from each plot, there is preventative work including green de-stemming and hand trellising of the vines.

A passion for wine

Passionate about the art of wine making since childhood, Guillaume de Chevron Villette has equipped himself with the most modern material due to his perpetual quest for innovative techniques.

Today his wine cellar enables him to make high quality wine in large quantities. Using his knowledge as a winemaker, a farmer and an oenologist he knows how to get the very best out of each plot of his vineyard.Thus, each year, he creates a new vintage, expressing the finesse and personality of each part of Provence, with as much pleasure as the year before.

An ultra modern wine cellar :

  • 3 harvest reception docks equipped with heat exchangers. 100% of the harvest is cold treated.
  • 3 optical sorting tables. 100% of the grape harvest is sorted to eliminate any remaining damaged grapes as well as other plant debris (leafstalks, bits of leaves….).
  • Thermo regulated stainless steel vats of 40 000 hectolitres which allow vinification of each plot (3 hectares) separately.
  • 7 nitrogen presses to avoid oxidation, an indispensable precaution to conserve the quality of the wines.
  • Une installation totalement automatisée pilotée à partir d’une salle de contrôle.
  • A totally automatic system directed from a control room.
  • This modernity, coupled with the constant quest for hygiene in the vinification and bottling processes, means that the quantities of sulphites used in the wines have been halved, while conserving all the quality of the wine.

A competent team

Throughout its development, the Chevron Villette business has been supported by a team of trained and competent specialists. The majority of this team has followed the company’s expansion, both in terms of acreage and equipment. Some of them have been working with the company for over 25 years, witnessing the evolution brought about by new technology. Their loyalty in key positions is a guarantee of quality for the company.

The team has grown with the company in each of the developing areas: cultivation of the vines, wine making, bottling, logistics, administration, marketing and communication.
